Sardines-Rillettes from Vendée

Ingredients for 2 persons:
• 1 can of sardines
• 1 small shallot
• 1 tsp. capers
• chili
• 100 gr cream cheese
• 3 stalks of coriander (or parsley, according to taste).
• green olives
• 2 tbsp. lemon juice

1. Finely chop a teaspoon of capers and the shallot. Mix the cream cheese with chopped coriander (or parsley), shallots, capers, minced chili and lemon juice. Season with salt.

2. Add the sardines and mix/crush with a fork (leaving some small pieces).

3. Garnish with olive slices and a coriander leaf.
